Mini Caramelized Onion & Goat Cheese Tarts

Ingredients
Total Time: 1 hr 20 mins

1 tbsp olive oil
1 tbsp unsalted butter
1 large onion, thinly sliced
½ tsp salt
½ tsp sugar
1 tsp balsamic vinegar
1 sheet frozen puff pastry, thawed
1 egg, beaten (for egg wash)
⅓ cup fig jam
4 oz goat cheese, room temperature
Fresh thyme, for garnish
Procedure
Heat olive oil and butter in a pan over medium-low heat. Add the sliced onions, salt, and sugar. Stir occasionally and cook for 35-40 minutes, until deep golden brown and caramelized.

Stir in the balsamic vinegar and cook for 1-2 more minutes, then remove from the heat and let cool.

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Roll out the thawed puff pastry and cut it into 1.5-inch squares (about 20-24 pieces). Place each puff pastry square onto the prepared baking sheet, then brush the edges of the pastry squares with the beaten egg to create a golden crust.

Bake for 12-15 minutes in the oven, or until golden brown and flaky.

Allow them to cool slightly, then add a small dollop of fig jam in the center of each square. Top with a small spoonful of caramelized onions and goat cheese, and add a small sprig of fresh thyme.

Serve warm and enjoy!
